I don't think. We don't have specific rules for each race. This is always the rules of the current TDF tahat are applied because we d'ont wan't players to read or learn specific points tabs or particular rules. Nonetheless, commentaries are wrong and that something that may be part of a future patch if have commentaries that can suit for those situation.

I agree, sprints could be more difficult but it can't be patch this year because it is linked to the aspiration and speed of the riders. Moving that means many weeks of testing cause it will have an effect all the time, every second you play we calculate energy consumption and aspiration is taken into account, so it can have side effects on breakaways, recuperation, attacks etc...

Number of escapees also depends on "the stage number". I mean, if the stage is played in the first week of a TDF, the breakaway will be smaller than if it is played in the last week of a TDF.
